Quick Checklist Before Buying a Combi Oven

  1. Peak Covers?
    • Up to ~100 → 3–5 pan countertop or compact floor model.
    • 100–300 → 6–10 pan floor model.
    • 300+ → 10–20 pan oven or consider two units.
  2. Utilities on Site?
    • 400 V three-phase with limited gas → Electric combi oven.
    • Strong gas supply with canopy ventilation → Gas or hybrid combi oven.
  3. Menu Focus?
    • Precise steaming or bakery work → Boiler steam system.
    • General roasting and steaming → Injection steam system.
  4. Water Quality?
    • Hard or high-TDS water (especially WA, SA, NT, QLD) → Filtration + softening + reverse osmosis (RO).
    • Softer water → At minimum filtration and softening recommended.
  5. Space and Canopy?Check oven dimensions, required clearances, door swing space, and ensure there is a clear delivery path for installation.
  6. All-in Budget (Oven + Installation + Water Treatment)?
    • Under $25k
    • $25k – $50k
    • $50k+

    Use your budget range to shortlist two or three suitable models.

  7. Get a DemonstrationArrange a product demo, involve your chef and licensed electrician (sparkie), review the setup requirements, and then make the final decision.
