You’re balancing three things: internal capacity, external footprint, and daily volume.
3.1 Internal Capacity vs Daily Covers
Using GN 1/1 pans:
- 3–5 pans – Up to roughly 80–100 covers a day.
- 6–10 pans – Roughly 100–300 covers a day (typical independent restaurant, most common sizing).
- 10+ pans / roll-in – 300+ covers or heavy batch production.
Lean a little larger if you do lots of prep or functions; undersizing is one of the most common and painful mistakes.
3.2 External Dimensions and Clearances

Also allow for 100–150 mm clearance at the sides and rear for ventilation and servicing,
a 700–900 mm door swing, and safe standing space.
Make sure there’s a clear path through doors and corridors on delivery day.
If space is tight, stacked smaller units can sometimes work better than one large cabinet.
